![]() Cave SANSTRAVÉThe sparkling wines from this region have been well-known and celebrated for hundreds of years in Spain. However, only until recently have these wines found their appropriate place in the international table. The Cava (sparkling wine) that the Sanstrave winery produces is a fantastic example of how good these wines can be. The building that houses the Sanstrave winery has been used to craft wine since the 19th century but it was in 1968 when the Sans family and the Travé family brought it back to life. They have successfully blended the traditional methods and history of Cava with modern techniques to create wonderfully clean and crisp "Cava". Cava (which means cave) is cellar aged in the microclimate below the winery that is dug into the ground and provides a steady temperature and humidity necessary to develop these wines. Vines are grown in the highest part of the Solivella village, which belongs to the classified region of "Conca de Barberá" in the province of Catalonia (Northeast Spain). There are nearly 20 hectares of red, clay soil that give a special signature and elegance to these wines. The first Cava was created in 1985 and was so successful that they named the wine to honor both families (Sans and Travé). Due to the success of their Cava, in 1991 they decided to expand the small winery to allow them to create small batches of additional wines. The winery now produces small lots of seven wines using different blends of red grapes (Tempranillo, Cabernet Sauvignon, Merlot, Garnacha, Pinot Noir) and white grapes (Gasset Blanc, Chardonnay, Macabeo, and Perellada). ![]() |
